To pick your default SIM for data, tap Settings > Mobile > Mobile Data > select the SIM you'd like to use data with.

Google Pixel

To pick your default SIM for data, tap Settings > Network and internet > SIMs > pick the eSIM you'd like to manage settings for > toggle 'Mobile data' on.

Samsung

To pick your default SIM for data, tap Settings > Connections  > SIM card manager > scroll down to 'Preferred SIM card' and select your preferred SIM for mobile data.
